The concern to store wines is as important as the are used to produce them. It is during the aging process that the grapes will impart their characteristics. The wine ages in barrels and then it is bottled and stored in our caves, where, at almost constant temperature, in a silent and dark surrounding, it continues its evolution.
The aging period is defined in accordance with each type of wine, throught tasting method. At a sensorial level, it is possible to appreciate the reduction of harshness, development of color, aroma and bouquet formation.
